   Fresh smoked Virginia ham served hot or room temperature with a rosemary mustard sauce.

ROASTED PIG
   A whole pig roasted and displayed on buffet with the head, tail, feet, etc, carved and served with hot gravy and rolls.

LOIN OF PORK
   Tender pork loin stuffed with dried apricots and prunes with a molasses and Madeira wine sauce.

SAUSAGE SCALOPPINI THYME
   Traditional blend of peppers & onions with pork sausage and an addition of dried portobella mushrooms simmered in a spicy marinara sauce.

SHREDDED PORK
