   Whole beef tenderloin roasted and sliced rare on the buffet and served with a Sauce Bordelaise.

MEATBALL SANDWICHES
  Traditional meatballs served in a freshly made tomato sauce with rolls and grated parmesan cheese.

BEEF BOURGUIGNON
  Beef tips cooked with carrots, onions, mushrooms in a rich Burgundy sauce.

SALSA GARLIC FLANK STEAK
   Lean flank steak marinated in a piquant sauce and garlic, grilled on site, thinly sliced and served with a corn salsa.

ROASTED ROUND OF BEEF
   Whole top round of beef with a stone ground mustard crust, roasted and carved on the buffet, served with au jus and horseradish.

BEEF KABOBS
   Herb-lemon marinated sirloin cubes skewered with red onion and mushrooms, seared, served with lemon-butter sauce.
